What is the Alcalá Gastronomic Contest?

Alcalá de Henares, with its impressive historical and cultural heritage, also has a great deal to offer in terms of flavours and aromas that delight both visitors and locals alike. Alcalá Gastronomic – Fomentur, the association of restaurateurs for the promotion of tourism in the city of Complutense through gastronomy, opens the new academic year and welcomes the autumn with a highlight of its annual programme. On 13 September, the dishes of the 20 restaurants that have taken part in this year's 9th edition of the Alcalá Gastronómica Competition 2023. With this call for applications, we aim to encourage High-quality gastronomy, The city is considered a key economic engine for the city. The next 26 September, the Parador de Alcalá de Henares will host the awards gala of the 9th edition of the Alcalá Gastronómica 2023 competition.. Do you want to know which dish we presented?

Our tour of the Alcalá Gastronómica Competition

The dishes competing in the seventh edition of the competition have been presented, and following the jury's deliberation on 13 September at the Hospitality School, the list of the 10 finalists. And we have good news: Casino Alcalá is among them with its dish: Oxtail Cripsy. The cuisine of the Casino Restaurant is characterised by its commitment to authentic flavours and quality ingredients. Each dish is a masterpiece in itself, created with care and passion, combining the pleasure of good food with the beauty of local culture, making every bite a truly unique experience. Our offerings at the Alcalá Gastronómica competitions are always a nod to traditional cuisine with the avant-garde touch that characterises the dishes on our menu. Some of our offerings presented in previous years were:

Oxtail Croquette, Casino's offering for the IX Alcalá Gastronómica Competition

This year we have presented a dish that encapsulates the essence of Spanish cuisine, a culinary delight that combines tradition, patience and a love of good food: Crunchy Oxtail with Truffled Potato Air, Red Wine Jelly and Carrot Emulsion.

Originally from the region of Andalusia, oxtail has gained recognition throughout Spain and beyond, becoming a jewel of Spanish gastronomy.

The main ingredient of this dish is oxtail, which is slow-cooked for hours until the meat becomes tender and falls off the bone easily. This slow cooking technique is key to achieving the tender texture and deep flavour that characterise oxtail. In addition to oxtail, typical ingredients include onion, carrot, garlic, tomato, red wine and spices such as bay leaf. Everything is cooked over a very low heat for a long period of time, allowing the flavours to blend and develop fully.
