Ingredients for the Creamy Mascarpone Cheesecake
This magnificent dessert is believed to have originated in its most primitive form between 8,000 and 3,000 BC. Following its history from its origins to your plate, it was part of the menu for athletes at the first Olympic Games – 776 BC – due to its high protein content, and like Christopher Columbus, it conquered America – specifically New York – with the New York Cheesecake version, probably the most widespread version of this dessert, and whose recipe has evolved in each region of the world.

Method of preparation at Casino Alcalá
Before I tell you how we achieved a sublime result with our creamy mascarpone cheesecake, let's review the main problems you encounter when preparing it:
– The first thing we're going to do is prepare all our ingredients. We'll start by crushing the Lotus biscuit in the Thermomix or blender to create the biscuit powder that will eventually form the base of our cheesecake.
– The first few times, it’s most normal for the surface of the biscuit to crack and break, so to prevent this, we should tip it onto the mould with non-stick baking paper and then lightly press the biscuit crumbs down until it’s compact.
Next to our mould, we prepare the mixture of the rest of the ingredients that make up our recipe, blending them until a homogeneous mass is created. Once we have the mixture with the right consistency, we must sieve it to remove any lumps and give it a few taps to eliminate any air inside.
These tips are the first steps to achieving a creamy mascarpone cheesecake with an indescribable flavour.
Baking and presentation
Now that we have everything prepared, Preheat the oven to 180°C and we put our mould with the cookie in for 7 minutes to finish compacting our base and avoid future cracks in our precious cake.
Once the first bake is finished, we will pour the previously strained mixture onto our biscuit base and put it back in Everything baked for 35 minutes, lowering the temperature to 160ºC.

This cake is delicious on its own, although accompanied by raspberries and a little icing sugar it offers an incredible play of flavours.
That is what is visible to anyone, whether an experienced chef or an amateur cook without much experience, but what is not seen is the importance of balance between our ingredients.

Instructions
- Crush the biscuits and press the biscuit dust into a tin lined with baking parchment to make the base.
- Mix the remaining ingredients until you have a smooth dough, sieve it and remove the air by tapping it lightly.
- Preheat the oven to 180 ºC, bake the biscuit base for 7 minutes, then pour the mixture over the base and bake at 160 ºC for 35 minutes.
