We have renewed our menu to offer a more modern experience, with dishes that reflect our way of cooking today and a careful balance between tradition and modernity. We listen to those who visit us, to the product and the season, and from this we create a fine-tuned proposal, faithful to our essence and designed to be enjoyed even more.

We have opted for dishes that combine respect for the product, modern techniques and recognisable flavours. They are new creations, but with the feeling that “this had to be here”.
Josper Leek with Hollandaise and Iberian Jowl
We start off strong. This dish is an ode to simplicity turned into excellence. The leek, worked at Josper, It takes on a light smoky aroma that enhances its natural sweetness. We like this combination: a humble vegetable elevated by precise cooking and the character of the fire.
We accompany it with a hollandaise sauce which adds creaminess and a subtle touch of butter. And to complete the whole, the Iberian jowl, which adds texture and a touch of sweetness that rounds off the dish.
Crunchy Torreznos with Revolconas (fried rashers of bacon)
Torreznos have legions of fans, and we are among them. But we wanted to give them a twist, to make them your own. that's why this new version comes with a irresistible crunchy texture and an accompaniment that suits them just fine: some revolconas soft, tasty and full of tradition.
This dish is pure enjoyment, without complications, without artifice and without unexpected twists and turns. It is a recognisable dish, perfectly executed and very much our own.
Selection Cheese Board with Quince and Regañás
Cheese lovers are in luck. We know that a good cheeseboard is a world of its own, so we have prepared a selection of cheeses that combine different intensities, textures and nuances.
We accompany it with quince jelly, which adds sweetness and a smooth texture that contrasts very well with the strongest cheeses, and crunchy chunks that add an ideal salty touch. It is a dish designed to be enjoyed without haste, to share, to whet the appetite or to end a meal calmly.

Croquettes are one of those dishes that are not negotiable. They are always there, they always fly and they always generate debate about which is the best version. After evaluating different options, we decided to focus on the essentials: ham croquettes.
Why? Because it is the croquette that most represents our cuisine, the one that is best received and the one that allows us to work with a smooth, balanced and flavourful béchamel sauce. Sometimes simplifying is improving. And this is the case.
Russian Salad «Casino»: now with optional extras
Our ensaladilla is another of those classics that could not disappear. It is still the same as you know it, but now you can add White Prawn or Bluefin Tuna as an extra.
The base is still as creamy, balanced and tasty. The only thing we have added is the possibility of personalising it with a more seafaring, more elegant or simply different touch. We think it was time to give this option to those who are looking for a more special touch to a much-loved dish.
Steak Tartar with Classic Dressing and Yolk Emulsion
Steak Tartar is one of those dishes that appreciate precision. We have decided to go for a classic dressing, elegant and balanced, which respects the meat and lets it express itself without overloading it.
The yolk emulsion adds creaminess and depth of flavour, making the whole more rounded. It is not a radical change, but it is an improvement that you will notice from the first mouthful: more harmony, more technique and more respect for the product.

Tenderloin tips Rossini with Foie and Oloroso
The sirloin tips are cooked to just the right degree of doneness to maintain their juiciness, accompanied by a Foie gras that adds creaminess and a touch of Oloroso wine which enhances its flavour with deep and slightly sweet overtones.
It is a dish designed for meat lovers full of flavour, a combination that works because it is both classic and contemporary at the same time. A perfect balance in our new Casino Restaurant menu.
